I've always just canned diced tomatoes or salsa. But I have a Vittorio strainer (that I use for applesauce)!! After straining and while heating the sauce to thicken it (I assume), do you add anything to the tomato mixture?
I ask because I just finished canning 36 jars of salsa and noticed a lot more tomatoes ready to be picked!
That is what I am doing this weekend (and last weekend and the weekend after this one!) Getting a food mill changed my life. You may already know this, but I figured I would pass it along since it saves so much time... if you are making sauce, run everything through the mill but put the pulp in a large container preferably with a spout at the bottom (I use a water cooler) and let the pulp sit overnight on the counter by the sink. In the morning the solids will have separated rising to the top and liquid to the bottom. Open your spout and let it drain out. You'll be left with a thick tomato pulp without all the heat and electricity used to simmer it all down. I still simmer it on the stove to kill any possibility of bacteria, then can. Amazing!
I just wanted to write that it's a wonder that no one commented on tomato dude, but then Alice did. Hah! :)
Gosh, I would love to be able to come over for a visit now and eat some of that delicious sauce. Which reminds me -- have you ever watched CLOUDY WITH A CHANCE OF MEATBALLS?

tomato envy! These look great...our tomatoes just haven't been the best producers this year. Weather's been a tad erratic (waaaay too hot, now it's cool and rainy).
I'll be thinking of you when we get to canning! Especially that tomato dude....hahahahaha
what a kool gadget, what is it? Mark makes his stewed tomatoes from the garden every year, gives us enough for the whole year. this sure would make his job easier and faster. kool sunset photos. great letter from red cross. hope all is well with you and yours.

So far, I've put up 7 quarts of sauce and 13 quarts of diced. Still waiting for my peppers so I can make salsa! :)
